Dry. Aged. Beef. – Much revered in gourmet circles the word alone suffices to make mouths water. The well-hung, dry-aged beef makes for steaks claimed to be the best in the world. Dry aging is also the oldest method for aging meat. Still on the bone the meat is hung for several days at controlled temperatures and humidity levels. A true connoisseur expects top quality, after all he pays princely sum. Therefore, the manufacturer needs to demonstrate sure instinct in selecting the right meat and technical equipment.

Meeting high demands

More and more meat producers take on dry aging, so as to cater for the needs of this exclusive clientele. But they know that the conditions for aging must be right. This means that the temperature must be near the freezing point and the humidity level shall amount to about 60 per cent at all times. Beef is matured on the bone: rib eye and sirloin steak take about 21 to 28 days, the period for tenderloin only amounts to seven days. In the process of dry aging the meat loses up to 40 per cent of its weight. The outer layer turns black and goes mouldy. On the inside, though, is the precious meat of exquisite taste that needs to be extricated by the butcher.

During dry aging beef loses roughly a third of its weight. This is due to the reduction of meat juice promoted by the low humidity level. Keeping an eye on the climate

Making sure that all parameters are observed is definitely worth taking a closer look. The Trotec climate measuring devices T210 and T260 provide a quick overview. The precise sensors of the devices can quickly and easily determine air and dew point temperature as well as the relative, absolute and specific humidity level. By means of the supplied MultiMeasure Studio software these values can be documented and evaluated via a USB connection. Trotec’s climate data loggers of the DL series also do an excellent job of monitoring the room climate. In addition to air temperature and humidity the current air pressure values are also detected precisely.
