Especially in meat processing and sausage production, optimal hygiene is paramount. This is the only way to guarantee a good product quality. Therefore, strict hygienic requirements have to be met when handling meat – particularly in cooling areas where raw products are processed. But due to the low temperatures and high humidity levels, this is exactly where to expect the greatest dangers: condensation, corrosion and the consequently affected hygiene. The odour nuisance in meat-processing establishments, which naturally develops at high humidity levels, must not be underestimated either. Protective clothing, disinfection, compliance with the cold chain and other strict hygienic requirements are on the agenda in the processing of fresh produce. The working areas are regularly cleaned in a meticulous way and the products are treated with caution throughout the production process. All this, however, is of no avail for as long as the climatic conditions are not quite right. One of the greatest risks can be found in the air – humidity. If the latter is not ideally regulated, the production workers have to overcome many difficulties.

Condensation – a serious issue

Especially in cool areas, too high humidity values must not be underestimated. In cold storage houses and other operating areas of the meat industry, where the cold chain has to be maintained, there is a risk of condensation. If the dew point in the air is higher than at the surface of working areas, walls or ceilings, condensation forms quickly. This is because the air is cooled down by the cold surfaces and the water vapour condenses to water. If drops fall onto the unpacked meat products, germs can form. Cardboard boxes absorb humidity as well, which can ruin entire stocks. Due to the high humidity, both the development of odours and the perceived coldness increase significantly. These two factors lead to a reduced staff productivity. Companies have to face growing sickness absence rates.

Optimum protection thanks to focussed humidity regulation

Create an agreeable and valuable working environment. And yet: a cool atmosphere is a must. Even if temperatures are kept particularly low in cold storage houses and working areas, this does not have a significant impact on the humidity regulation. Especially in cold stores the relative humidity cannot be decreased to less than 70 to 95 per cent simply through temperature. The use of high-performance dehumidifiers is the only solution. Stationary drying systems
